Lately, people keep asking me to make "beer can" chicken...mmmmmm!!
If you've not had it, you need to change your life and try it. It's an easy recipe.
Brine one chicken over night (1/4 cup kosher salt & 1/4 cup sugar, plus whatever seasonings you like...I use garlic, onion, paprika, green peppercorns and some other stuff). Brining needs to be done in a snug and airtight container like a ziploc bag w the air pushed/pulled out of it. This helps the salt do what it needs to do - open those capillaries and guarantee you some very moist meat.
Get a can of beer -- who cares what kind? Dump or drink the top inch of beer from the can. You can put some herbs into the beer can...they will cause fizzing, but that's ok!! Note: while steam from the beer permeates the chicken, the actual beer does not touch it and the dish is not alcoholic. Preheat oven to 350 or get your closed grill to that temperature - has to stay there about an hour to an hour & a half, depending on size of bird.
Pat your bird dry. Tuck the wings up and behind bird's back.
You can either stand the chicken directly on your freshly cleaned beer can OR use one of the upright roasters designed for roasting chicken. The grease drips from the chicken so remember it needs to be on something that will catch the drippings. Sometimes I lightly oil the skin with olive oil. Not always.
Put the bird in the oven. In about 45 min, check the temp of breast meat with a stick thermometer. Done is 185 degrees.
Tender inside, crispy outside....mmmmmmmmm!
You can do this w a can of fosters and a turkey if you like...:biglaugha:

Sounds tasty. I'm going to give it a try. I've always fancied beer in my food...goulash is about the only thing I've had.

A favourite of mine, and others is 'Suppli al telefono'
Make a decent risotto and let it cool.
Mix a couple of raw eggs through it as a binder and then make a small, slightly larger than bite sized, ball in the palm of your hand. Place a cube of buffalo mozzarella in the centre of each ball and then roll the ball in fresh breadcrumbs....continue until the mixture is finished. Refrigerate for a while and then deep fry them in hot oil until golden brown. They should be served with the mozzarella piping hot in the centre.
They make an excellent lunch/starter dish with some fresh mixed leaf salad in a dill dressing.

I love to cook! I always get request for my Greens and my chili
When I cook Greens I use a mix of Mustard,Turnip and Spinach(sometimes kayle) with Smoked turkey. My mom taught me how to clean and cook greens the right way. I can tell you what I use to season them,(its a combination of many spices and herbs) BUT....if I tell you ....I gotta kill you!:lol:

Darryl and I both cook, so I take a back seat sometimes but I am asked to fry chicken, make spaghetti, chicken and dumplings. My children always ask me to make pancakes from scratch.
Since I enjoy baking more and love to fatten folk up:

Chocolate Chip cookies

Butter Cookies (yeah they taste just like the "old school lunch-lady" cookies)

...then there are my salmon cakes. From actual salmon, diced by hand. I make the mayonnaise by hand also. One of my friends griped that it was such a process to dice the fish and get the ingredients set up...then one bite from the first one out of the oil? He became a believer! They are da BOMB!!
Not sharin' that recipe tho.:tongueout:

My wife like my meat loaf, burgers, and tri-tip slow cooked over oak. I don't have any recipes per se because I just do whatever feels right at the time.
I will say that making your own bread crumbs is best with the meat loaf.

My niece used to beg me to make my super cheesey Mac & Cheese until I taught my sister how to make it. I work wonders with any type of chicken dish, Fried, Baked, Broiled....you name it! My Mom asked me to make Oxtails for Christmas...that was a compliment coming from the person that taught me to make them...

My Cheesy Spinach Lasagna (it's the sauce that makes this dish!)
My German Chocolate Cake (from scratch ya'll - I sifts the flour and er'thang)
My Life Altering Guacamole (I know, it doesn't sound exciting, but I have a secret ingredient!
Coconut/curry lentils and recently my Curried Chicken Chowder
Finally, I used to do a 'Breakfast Ritual' for friends (and lovers) that consisted of scrambled cheese eggs, homemade hashbrowns, french toast (or pancakes), (preferably) T-bone steak (or whatever breakfast meat available incl. homemade turkey sausage or salmon croquets)
brought to you on a platter, wherever you collapsed (from the previous nights party or other activities - if properly manipulated, I have tendency to come down with the'Jill Scott Syndrome)

Stuff I frequently prepare:
Salad with watercress, lettuce, peppers, cucumbers, red onion and vinaigrette
Baked ziti w/ kale (or collards or spinach) becuase it can feed a dozen people
Sauteed chicken breast w/ fresh herbs
Rice pilaf w/ lentils
I regularly get requests for:
Green salad w/ vinaigrette or avocado dressing
Duck confit
Cocido (Castillian-style stew w/ beef, chicken and chick peas)

Me too! I remember eating fried chicken that was fried without flour. It was placed in the oil straight from the water. YUCK! I tried to be nice and say I wasn't hungry, didn't work http://deephousepage.com/smilies/shudder.gif

I was raised by some chinken frying southern women, my grandmother and her sisters could burn in the kitchen...some folks only know KFC or maybe even Popeye...that's not home cooked, they have no clue...

not when it didn't have a drop of seasoning. First of all I am weird, I don't eat meat if it tastes too much like flesh. I must have some salt, pepper, hot sauce, sugar or something.

Getting the chicken to room temp first is key. I don't even like fried chicken, but will make it because wife and oldest boy like it.
