You may also want to check out Cowboy Beebop. A very good series made by the same folks that made Samurai Champloo. It's soundtrack is infused with Jazz(as opposed to Champloo's hiphop infusion).

arggh I'm so bad with titles but I have seen some god ones lately. Cosign on Spirited Away, Floating Castle & Metropolis, all excellent. Just saw a crazy one two nights ago that John Woo produced. Let me try and track down the title, was excellent. Another one was about a couple of orphan kids in the future that lived somewhere that reminded me of the bad island in Pinachio, also excellent. Yeah I suck as I am providing negative information, but I will try and make amends,

Metropolis is a pretty amazing movie. If you can, try to get past the cover and watch it and I think you'll be thankful for doing so.
i don't really like this type of artwork on the characters.

I was so impressed with afro samurai
also theres this feature called 'waking life' really really good.
basically goes through philosophy over the last 2000 years and does so in a really intresting way, bit of a mind fuck but highly reccomended.

If you don't mind straying away from the darker, more action-oriented stuff, I highly recommend any and all Hayao Miyazaki movies. Some are better than others, but they're all pretty much timeless. My favorites of his are Laputa: Castile in the Sky and Nausicaa: Valley of the Wind.
In addition to Hayao Miyazaki, I recommend the following which are from many of the other genres that can be found in anime:

Appleseed X Machina is what I just saw a couple of nights ago, produced by John Woo. Crazy shit. Good Cyborg vs CLone vs Human type plot. Impressive computer animation.

Have you watched the entire series? I watched the first couple of episodes and the concept seemed interesting but I got pulled away to other things and forgot about going back to the series. Would you say it's worth watching in its entirety?
Have you also checked out Beck: Mongolian Chop Squad? The engrish can be a little funny, but, I enjoyed the series. Sometimes I get tired of all the fantasy, sci-fi, mecha stuff that a simple coming of age story seems like a breath of fresh air. It's cool how music is a central part of the story too. I'm hoping they work on a new season.

I watched the whole death note series. There's a couple episodes that are on a different level in terms of writing. Very clever. It's not your typical coming of age/space age thing. And it has an ending. (Many anime's endings make no sense, or are complete cop-outs)
Something you should check out for laughs is Ogenki Clinic too

I just finished watching the new Gainax series "Tenga Toppen Gurren Lagaan" which makes no sense whatsoever but fun to watch nonetheless.

BTW, they're redoing the series and releasing them as a tetralogy of films called Rebuild of Evangelion. The first one is out now in Japan and is called "Evangelion: 1.0 You Are (Not) Alone."

Anyway, if you like GitS: SA/C (Ghost in the Shell: Stand Alone/Complex), then you should make sure to get "Solid State Society."
Trigun is another one that nobody mentioned. Cowboys in space and cool shit like that.
Ergo Proxy is cool, as is Black Lagoon. However, because of Geneon's closing up shop, Black Lagoon and a few other series will not get finished...shame.
If you want a real weird anime series, check out Teknolyze. Real surrealistic. Elfen Lied is another one that's pretty strange.
Somebody mentioned Gantz; that was a fun series and I loved the theme song, "Rough Shot."
If you want to get into the hentai (adult/porn) stuff, check out the "Cool Devices" series. That or "Bible Black" if you want to see some raw-dawg stuff.

I know you said Vampire Hunter D came up in the search. Get Vampire Hunter D: Bloodlust as well as the original. I have seen many great animes and in my opinion Bloodlust is among the best and even better than the original D. You picked some good ones.
Well, if you are into to Kenshin, from what I understand there is a new Ruroni Kenshin series in the works. I don't know if this is a 'revamp (reworking or revamping older series is the new thing now in Japan)' or another untold story, but that might be something to look for.
Speaking of samurai stories, check out the Peacemaker Kurogane series. That one is a samurai story with a lot of political elements involved in it. There is also an anime remake of Kurosawa's "Seven Samurai" ("Samurai 7") which is pretty cool, despite the slightly futuristic angle that it took.
My four favorite Ninja anime, not counting Ninja Scroll are "Youtoden," "Blood Reign: Curse of the Yoma," "Dagger of Kamui," and "Makai Tenshou."
"Makai Tenshou" is one of my most favorite because it's a Jubei Yagyu story (not the same Jubei from Ninja Scroll). It deals with the ban on Christianity in 1614 by the Tokugawa Shogunate and the uprising/massacre at Shimabara. You have ninjas, undead heroes, monsters, and all kinds of cool stuff.
I'd give you more, but it's after midnight and I've got an 8AM house radio show to do in the morning...but that should be enough to keep you checking, and if you already have the stuff I listed, then you are on top of the game with the definitive stuff (IMHO)! :)

We'll if we are going to talk about hentai, then we have to start with the penultimate classic; "Urotosukidoji (Legend of the Overfiend or Wandering Kid)."
This is the classic "tentacle rape" anime from which all others spawned.
This anime has it all including one of the most screwed up deals with a demon in anime. This kid who gets taunted at school by everyone (including a bunch of lesbians who trick him into thinking that he's going to get laid, only to make him watch the door to a storage room while the rest of them get off on each other...they don't even allow him the courtesy to watch and jack off). He encounters a demon who offers him his dick. There's only one catch...he has to cut his own off to graft the demon dick to his body. It only goes downhill from there, and this isn't even the main story of the anime series; it's only a side story.
I mentioned the "Cool Devices" series in an earlier post. This series consists of several short adult films of which only a few are of the typical "anime" style. As I tell people who inquire about the series, "this is straight porn, just with animated characters." A must have if you are into that kind of thing.

I loved Gurren Lagann. Very original and great art. Definitely my fave of the year. (I also liked Lucky Star... but obviously wouldn't recommend it here!) Next up, Clannad.
