So this is my very first time trying do salmon, and while i got it cooking in the
pan, milky white stuff is coming out. WTH? Is this safe or is this bad fish?

You're fine.. Just make sure the salmon is opaque in color when you're done.
Also the top should flake when you touch with a fork/knife..

but don't over cook it! Whatever you do!!! Please!
The white stuff is fine...don't worry about it at all.

I know, right...
I love salmon--when I poach mine I only want a bit of Grey Poupon mustard on the side...just to tab my fish in. Perfect compliment.

For a little zest
add some lemon while cooking it!
Especially if you are like me and don't like the fishy smell or taste!

I do mine fairly basic. Just add some adobo seasoning and a bit of chili powder for a bit of a kick and into the pan it goes with some olive oil.

but if you like it make sure you don't buy the farmed with added coloring crap. wild alaskan is the only way to go.

Smear some caribbean jerk sauce on it, let it sit in some aluminum foil over night......the next day place on a hot griddle with just a little bit of olive oil and get ready to slap yo momma....or if you got a smoker, smoke that shit for a few hours and get ready for your neighbors to knock on the door.

I'm not a big fan of it either, but I'll eat it. My favorite way is with a sweet soy sauce glaze and seasame seeds sprinkled on top.

If its filet then keep that mug on the skin side over indirect heat.....oil the grate or put down some foil (make sure you poke plenty of holes)...keep the top down except to hit it every now and then with a brush of olive oil.....pick up the entire foil package or use a nice long spatula....You try picking it up with some tongs youre gonna be cussin

use lower heat... we use mesquite coals in the later stages of the burning for all fish. oh and skewers help too..

to me.. it does not matter.. it does not seem right to place a salmon.. on a forman grill.. it almost seem like you making a salmon and turning it to a burger
salmon is the one thing i actually cook. (and believe me, that is no exaggeration - i soooo don't cook).
BUT i learned that you can cook salmon in the microwave. sooo easy. and sooo yummy!
(i'm a big salmon eater, almost any time i eat out, i order the salmon).
Cover with plastic wrap and marinate for an hour.
Keep covered and microwave on high for 7 minutes.
Let it stand, and plate the veggies (steam some broccoli with that, open up some white wine, and it's dinner fabulous!)
YUM city!

Microwaved fish? Might I suggest kegals for at least 30 minutes a day?

Blackened salmon is my new thing. Served with black beans and spinach. You can cook all of this together at one time. Less than ten minutes. Spinach goes last and serve the salmon on top with a little sour cream..

hahahah okay, i'm the queen of non-linear thinking but even i don't see the link between microwaving food and needing to do kegels

No. Find a fisher monger who gets supplied daily from a local fish market.
Even better, find a local fish market.

Just happens that I was thawing salmon today:
http://i32.tinypic.com/2d76fwo.jpg
Ingredients:
3 cups thinly sliced washed cucumber, do not peel
2 tsp minced jalapeno pepper, seeds and stem removed (or to taste)
½ cup chopped scallion
3 TBS chopped fresh cilantro
1½ TBS chopped fresh mint
1½ lb salmon fillet, deboned and skin removed cut into 4 pieces
2 + 1 TBS fresh lemon juice
TBS soy sauce
TBS extra virgin olive oil
salt and cracked black pepper to taste
Chop the 'salad' ingredients put aside in a bowl. Lemon S&P on the salmon and then sear it about 2-3 minutes a side depending on how thick your fish is. Mix the dressing plate the salad then the fish and pour dressing over both. If you follow this exactly, the mint is strong with a little kick. I throw more peppers in for extra kick. Take peppers out if you want a cool refreshing quick salad.
I think Kara could even do this.
