i did make some kick-ass lumpias last night!!
what do you prefer:
regular, shangai or fresh?!?!

Lumpia is the filipino version of an egg roll. They're not as big and, in my opinion, they have more taste to it. Plus, the sauce you dip it in is different. It's not sweet-n-sour sauce.

Super extra firm tofu works good. The kind that comes in flat squares in a vacuum pack. If it is already smoked or flavored or something that is best. I cut it up into tiny cubes.
shredded napa cabbage
shredded bok choy
grated carrots
thinly sliced shallots
maybe bean sprouts or whatever else
much minced or pressed garlic
much finely minced ginger
maybe some spices if I am in the mood
Saute all that stuff with sesame oil, soy sauce, and rice vinegar so that it gets soft enough to roll up. I usually make enough so I can fry up the whole package of wrappers (in canola or vegetable oil) cause they dry out.
Surely I am doing it "wrong" but they are a big hit wherever I take them graemlins/grinyes.gif
How do you do it?
Oh and rice vinegar + soy sauce + maybe something else for sauce. Maybe next time I will put some oyster flavored sauce in the mix.

cabbage
green beans
carrots
cook the chicken breast first. add soy sauce to taste and garlic. put in my cabbage - then my carrots - then my green beans. Add more salt or soy sauce to taste.
let cool and wrap those babies up
Seems like you're doing it right to me. ;) I'm going to have to try it w/ tofu next..that sound REALLY good.

I was just thinking... we've been catching loads of Dungeoness crabs up here lately. I bet crab lumpia would be the goods! I've been trying to think of something else to make with all those tasty little crustaceans besides sushi.....

Two of those for 45-60 seconds in the microwave and it's on like Donkey Kong. Ahhhhhhhh!!! I want some and I don't have any!!!

One thing I know is that nobody will go hungry at a filipino function. I love food. Period. So my ex-gf's mom used to love me cause she'd feed me until I turned fat. I loved it!! I asked about the Goldilocks cause I used to love going there to pick up like two or three boxes of ensemadas. That was my breakfast for the longest time. Two of those for 45-60 seconds in the microwave and it's on like Donkey Kong. Ahhhhhhhh!!! I want some and I don't have any!!!
