For me, there's a handful of sure shots.

Prince - "Kiss" (always works, especially with women)
The Emotions - "Best Of My Love" (classic)
Cheryl Lynn - "To Be Real" this is one of those songs that I played so damn much when I first started DJing, that I pretty much leave it alone now. Still a good song, though, and it still makes ignoarant drunk people dance.
