    The menu has been finalized!

    Thanksgiving 2007:

    2 Turkeys
    1 Ham
    *Beef Roast (wit da carrots and lil red potatoes)
    *Mashed Potatoes
    5 Cheese Macaroni
    Greens
    *Green beans and white potatoes
    *Spaghetti
    Chit'lins (blech
    Potato Salad
    Broccoli Salad
    Dinner rolls
    Corn muffins

    and for dessert:
    *German Chocolate Cake
    *Sweet Potato Pie
    Peach cobbler
    Rum Cake

    (I have been on a semi fast for a coupla weeks in preparation for next week. 1. to reduce my overall caloric intake for november/december and two to kinda shrink my stomach so that there is no chance of over-doing it!)

    (*I am charged with these dishes/desserts this year)

    I'm not a holiday person, but I am a family person - and I'm thankful everyday - this is just a reason for us to get together and love one another.

    and I'm especially thankful for that.

    What time should I come? It would have to be around 12. I have a 3:00 flight. I hope you will be done cooking by then.

    more like 10 - 15 oversized people.

    this dinner is nothing compared to the dinners we used to have back in the day (my g-ma used to be a professional caterer.)

    Baked ham
    Portabella mushroom sauce
    Mixed Greens(Collard.Turnip.Mustard,Spinach,Kale)
    Mac and Cheese
    Rice and Beans Belizean Style

    Pecan-Caramel Cheesecake
    Sweet Potato Pie

    1Pecan Caramel Cheesecake
    first boil a can of condensed milk for 3 hrs
    For the cheesecake recipe mix 3 eggs with a 1lb and a half of cream cheese add 1 teaspoon vanilla, 1 cup of sugar and after the milk has cooled 1/2 of the can.For the crust mix 1cup of graham cracker crumbs with 1/4 cup of sugar add 1/2 cup of melted butter pressed into a 9 inch cake pan(note to release the cake you must freeze overnight)Bake at 300 for 1 hour or when you shake the pan only the middle shakes a little, crack the oven door and let cool for a couple hours.After you chilled the cake let it sit at room temp for a little while run a hot knife along the edges and release the cake.Spread the remaining condensed milk on top of the cake decorate with pecans.
    Rice and beans
    Cook 1/2lb of small red beans until soft with minced onions celery,garlic I use smoked turkey my moms use ham hocks then drained and save the liquid.Mix 1lb of rice wth the beans add the liquid from the beans if it doesn't equal 32oz add water cook under a low flame until done season with salt pepper and sometimes I add a rosemary sprig for added flavor.
    Oyster dressing is easy Make your cornbread dressing as you usually do but when you bake it just add chopped oysters.

    2 Types of Dressing
    Sausage and Sage Dressing
    Smoked Oyster Dressing (yeah I GOTTA have it!)
    Mustard,Turnip and Spinach Greens W/ Smoked Turkey and Turnip Bottoms
    Baked Macaroni and Cheese (any one know where I can get my hands on a block of Gubbment Chees? it is the best for this!)
    Mom's Sweet Potatoes,w Rasins,Rum and Marshmellows melted on top
    Home Made Rolls
    Gibblet Gravy
    Cherry Cheese Cake
    chocolate/Yellow Cake (from Scratch)
    And shitlins ( ewww I cant stand to even look at them but Easy Gotta have them so his Auntie will cook them at HER house!)
