    Cooking Up A Treat (I Hope)

    just in the middle of making dinner...

    pasta with chicken and a creamy sauce made from white wine, double cream, veg stock, leeks & onions

    never tried this before but it certainly smells nice

    took your advice on the wine (after the meal at any rate)

    reporting back as requested - sauce was as good as I hoped and was well received by both my wife and son.

    recipe: (made it up myself)

    two skinned chicken fillets - wrap in foil and roast in the oven at 180 degrees (Gas mark 5) for 30 minutes

    one white onion chopped
    one leek chopped
    200ml double cream
    175ml dry white wine
    100ml vegetable stock

    boil the wine hard until it reduces by approx half
    add in the cream and vegetable stock
    bring back to the boil then simmer for 20 minutes

    at the same time

    gently fry off the onion in a seperate pan before adding the leek, adding a little of the wine, sweat the leaks with the onions for about 15 minutes

    when the chicken is cooked, remove from the oven and slice

    add the onions and leeks to the sauce, mix through before adding the chicken. your sauce is now ready to be served

    serve with rice or pasta

    as an alternative, do not slice the chicken and serve whole - pour the sauce over the chicken fillet and serve with thinly sliced roasted potatoes and seasonal veg
