What does "menudo" mean to you?

No, no! Not the corny ass group from back in the day, but the food. It is somewhat similar to chitterlings, I believe. Here's all you need:

Durango style tripe:

1 lb. belly tripe

1 lb. belly honeycombed tripe

1 cow´s feet

7 oz. Guajillo chilies

7 cloves garlic

1 onions

1 tomatoes

1 spring epazote

1 oz. Chiltepin chilies

cup oregano

20 lemons

whenever i go home(texas), i usually throw a party and i know that alcohol is going to be involved so i make sure we have enough menudo so people can have a bowl or two before they drive home and try to sober up. but it ususally is killed at family functions and/or when i was hungover. really great for the cruda.

i used love, i mean love menudo, but i don't eat cow & pigs anymore. i remember getting extra lemons, tortillas and butter, then dipping the tortillas in... hmmmmmm. damn that was good stuff. especially on a cold morning.
